Glutation

(GSH) jest przeciwutleniaczem występującym w roślinach, zwierzętach, grzybach oraz niektórych bakteriach i archeonach. Glutation jest zdolny do zapobiegania uszkodzeniom ważnych składników komórkowych spowodowanym przez reaktywne formy tlenu, takie jak wolne rodniki, nadtlenki, nadtlenki lipidów i metale ciężkie. Jest to tripeptyd z wiązaniem peptydowym gamma pomiędzy grupą karboksylową łańcucha bocznego glutaminianu a cysteiną. Grupa karboksylowa reszty cysteinowej jest przyłączona normalnym wiązaniem peptydowym do glicyny.
